Gems provide a variety of additional stats.
All items of Uncommon (Blue) rarity or higher do have sockets for Gems. The number of sockets depends on the rarity of the item.

There are different types of Gems and each type comes with different levels with higher levels having higher stats accordingly.

You can try to smelt two Gems of the same type to get one Gem of a higher level at the Smelting Technician. The chance and cost depends on the level of the Gems you are trying to smelt.
